Sweet - Sour Cucumbers with Onions

Ingredients

  • 2 cups cucumber thinly sliced
  • 1/2 tsp salt
  • 1 cup onion thinly sliced, I like using red onion
  • 1/4 cup vinegar
  • 1 tbsp water
  • 1/2 tsp sugar
  • 1/2 tsp dill weed
  • 1/4 tsp black pepper cracked
  • 1 dash cayenne

Instructions

  • Place cucumber slices in a bowl; sprinkle with salt and cover with cold water. Refrigerate 30 minutes.
  • Drain bowl of cucumbers well.
  • Add onions.
  • Combine vinegar, 1 tablespoon water, sugar, dill weed, cracked black pepper, and cayenne. Pour over cucumbers and onions. Toss lightly.
  • Chill 1 hour or longer, tossing occasionally, before serving.
